La Dispensa begins in the land.

The orchard, the vegetable garden, the greenhouse, the kitchen, and the daily rhythm of CasaMatilda all arrive here, in the pantry.

La Dispensa keeps what the season gives when it is worth preserving: fruit, vegetables, juices, compotes, creams, sauces and antipasti prepared in the CasaMatilda kitchen.

It is not built as a catalogue. It follows the life of the farm. Some years give more fruit. Some weeks belong to tomatoes, courgettes, peppers, aubergines or pears. The pantry fills when the land is ready.

Origin

Behind the products, there are the people.

Anna and Fabio cultivate their land in the Langhe and carry that work into La Dispensa through a simple principle: preserve what is good, when it is at its best.

The products come from a lived place, not from an abstract idea of rural life. The garden is worked. The trees are followed. The fruit is picked when it is ready. The kitchen receives what the land offers and turns it into something that can remain.

Some preparations also carry Anna’s family memory, like the antipasto piemontese she learned to make by watching her grandmother. These recipes were not born as products. They belonged first to a house, a season, and a way of not wasting what the land had given.

From the land to the kitchen

Every preserved flavour begins in how the land is treated.

At CasaMatilda, the work begins in the soil: crop rotation, natural fertilisation, careful harvests, and varieties chosen because they belong well to this environment.

We favour old fruit varieties and vegetables that need fewer treatments and less water. The aim is not to force the land into production, but to work with what can grow here with balance.

That is why La Dispensa should not be understood only as “farm products.” It is the result of a daily way of treating the land, the plants, the kitchen and the time needed to do things properly.

Fruit

Fruit, when it is ready.

From the orchard, at the right moment.

The orchard gives fruit according to its own rhythm. When peaches, apricots, cherries, pears, apples, blueberries, strawberries or ramasin reach the right point, they are picked and transformed with simplicity.

Juices, fruit pulp and compotes bring the full taste of ripe fruit to the table — to drink, to spread, to enjoy at breakfast, with bread, yoghurt or cheese.

Goloserie

Small pleasures, big flavours.

Le Goloserie are richer preparations, where fruit and vegetables meet cocoa, spices and other ingredients without losing their origin.

They are made for cheese, crostini, an aperitivo, or a small sweet moment of the day. They are still part of the pantry: seasonal preparations, made when the raw ingredients ask for that form.

The garden, kept for later

The garden carries on in the pantry.

The vegetable garden has its own season. The pantry extends it.

Tomatoes, courgettes, aubergines, peppers, onions and herbs enter the kitchen when they are ready. Some become antipasti. Some become sauces. Some become creams for bread, pasta, vegetables or an aperitivo.

This is one of the clearest meanings of La Dispensa: the garden does not end at harvest. It continues in jars, on the guest table, in the welcome basket, and later in the homes of people who take CasaMatilda with them.

Guests often meet La Dispensa first through the welcome basket, breakfast, an aperitivo, or a simple meal at the farmhouse. A jar on the table is not a separate object from the stay. It belongs to the same rhythm: the land, the kitchen, the house, and the table.
